4oz (112g) SR Flour
2oz (56g) Butter
1/2 egg
1.5oz (42g) Caster sugar
1oz (28g) dried apricots
1/2 eating apple
1/2 tbsp milk
Directions
- Preheat the oven to 220°/200° fan/ Gas 7.
- In a large mixing bowl, rub together the flour and butter until it looks like breadcrumbs.
- Peel, core and finely dice the apple. Dice the apricots. Add to the mixing bowl. Add the sugar.
- Mix together the milk and the egg and add to the mixing bowl. Mix until NEARLY bound together.
- Using a teaspoon, drop dollops of the mixture onto a baking tray. Allow space for them to spread.
- Cook for 12-15 minutes.
Notes
- if you prefer your fruit to be more visible, you can roughly chop the apple rather than dice it.
